Blueberry Pie
This recipe is a very light and fruity pie -free from nuts & cacao if you happen to struggle with them.
I received some beautiful products from Indigo Herbs. So many lovely new ingredients to experiment with including acai, goji & mango powders plus a delicious creamy coconut oil.
Blueberries, acai & gojis are all low GI fruits with high levels of antioxidants to help protect us from free radical damage.
Ingredients for base:
50g buckwheat
(soaked & dehydrated)
10g (2 tsp) goji berry powder
5g (2 tsp) acai powder
20g raisins
10g coconut oil (melted)
5ml filtered water
Ingredients for pie
150g blueberries
30g mango powder
2g (1tsp) purple corn extract
20g coconut oil (melted)
Method
Grind all ingredients for base in a hand-held blender or nutri-bullet. Press into small 4inch tin and pop in fridge whilst making the pie.
Blend all ingredients for pie and pour on top of base.Both blueberries and mango contain pectin which (along with the coconut oil) helps the pie to set.
Place in fridge for a few hours before slicing.
Notes
Ideally allow the buckwheat to sprout for a few days before drying.
If you don't have a dehydrator, soak the buckwheat for a few hours, rinse and allow it to sprout then pop in an oven on the lowest temperature to dry it out
